Tomato Ricotta Pasta Sauce

With seriously beef sausages, brocoli and carrots

Ingredients

1T Basil pesto

3T Tomato paste

75g butter, cubed

1/4 C Your choice of white wine

1/4C Grated parmesan

200g Tub of ricotta

300g Penne pasta

4 Seriously beef sausages, the kind from your local butcher 

2 or 3 carrots

1cup of brocoli cut into florets

Method 

Cook pasta as per packet instructions.

Fry beef sausage. Slice into small pieces, then set side.

Prepare vegetables and place in a microwaveable bowl with a good splash of water. 

For the sauce:

Gently melt butter in a sauce pan, add tomatoe paste and basil pesto.

Add white wine and bring to a simmer. Then add parmesan and stir briskly.

Just before you combine the sauce with the pasta and sausage, add the ricotta. Stir long enough for the ricotta to warm through. Then turn the element off.

This is a good time to microwave the veggies for five minutes, then drain.

Drain the pasta reserving 1 cup of the water separately , this is for just incase the sauce is thicker than you would like. If you dont need it, through it out.

In a large bowl mix together all the ingredients and serve.
