Don't Panic

Into the kitchen I went and just like Old Mother Hubbard, my kitchen was bare. Or at least the Lemon Pepper jar was and I had planned to use it as part of the rub on my roast chicken. What to do?

Casting my eyes about I saw a lemon, then my Coriander (Cilantro) plant. Now I had a plan for something tasty.

I zested the lemon, snapped off plenty of Coriander, grabbed my pepper mill; no way! It had stopped working. Now what. Tipping out some of the contents, they cracked beautifully under the flat of my knife.

With the second problem solved I chopped up the three ingredients finely, then rubbed over the butterfly chicken, and into the oven.

As they say the test is in the tasting. The family were as always wiling taste testers. The result, a small amount of leftover suitable for someones salad tomorrow.
